Your idea of using a pivot table is good and it will work. All you have to do is to not use a new file for each week. Spreading your data amongst different files is for the most part just a work creator and makes the manipulation of the data very difficult. Select the data that you have for the first week including the labels at the top of each column and on the Insert Tab click on Table. This will convert your list to a data table. Add all your weeks to the bottom of this table and you can use the filtering of the columns to pull out any bit of information that you may require on any customer or any week very easily.. . With this data table, you can then keep adding records to the bottom of the table by adding to the bottom of the table. The Pivot table will be updated by right clicking in the Pivot Table and clicking Refresh.
